Orange Chicken

Double-fried chicken tossed in a sticky citrus glaze bright with fresh orange zest and dried chili.

The method

    Marinate chicken in egg white and soy; toss in cornstarch.

    Fry twice: 4 minutes at 350°F, rest, 90 seconds at 375°F.

    Reduce orange juice, zest, sugar, vinegar, soy with chilis until syrupy.

  4. 04

    Tighten with slurry; toss chicken until lacquered.

  5. 05

    Finish with a fresh grating of zest.
