The method

    Marinate pork in all ingredients except honey for 8 hours.

    Roast at 475°F on a rack with water below for 10 minutes.

    Reduce to 375°F; baste with marinade every 10 minutes for 30 minutes.

    Brush with honey-maltose glaze; broil briefly to caramelize.

    Rest, slice across the grain, serve over rice.
