General Tso's Chicken

Crispy double-fried chicken bathed in a sticky sweet-tart glaze with dried chilis. The takeout staple, done right.

The method

    Marinate chicken in soy, wine, and egg; toss in cornstarch.

    Fry at 350°F for 4 minutes, rest, then fry again at 375°F for 90 seconds.

    In a clean wok, toast chilis with garlic and ginger.

    Add soy, vinegar, sugar, and stock; reduce to a glaze.

  5. 05

    Toss chicken in glaze until lacquered; finish with sesame.
