    Melt rock sugar in oil to a caramel; add ginger and scallions.

    Return ribs; toss to coat in caramel.

    Add wine, both soys, spices; barely cover with water.

    Braise covered 75 minutes; reduce uncovered until glossy.

    Finish with sesame seeds and scallion greens.
