Teochew Braised Duck

Lu shui duck — a Chaozhou master stock deep with galangal, star anise, and dark soy, spooned over sliced duck, tofu, and egg.

The method

    Blanch duck; drain.

  2. 02

    Combine all master stock ingredients in a deep pot; simmer 20 minutes.

    Submerge duck; simmer gently 90 minutes, turning once.

  4. 04

    Add tofu and eggs in the last 30 minutes.

  5. 05

    Rest duck 15 minutes; slice; spoon warm master stock over.
