Marbled Tea Eggs

Hard-boiled eggs cracked and steeped in black tea, soy, star anise, and cinnamon until the whites map like porcelain.

The method

    Hard-boil eggs 8 minutes; shock cold.

  2. 02

    Tap shells all over with the back of a spoon to crack — do not peel.

  3. 03

    Simmer tea, soys, sugar, salt, spices in 4 cups water 10 minutes.

  4. 04

    Add eggs; simmer 30 minutes, then off heat, steep 4+ hours.

  5. 05

    Peel to reveal marbled whites; halve to serve.
