    Fry suan cai, pickled chilies, ginger in oil 2 minutes; add stock, simmer 10.

    Slip in fish, poach 2 minutes; ladle into wide bowl.

    Heat fresh oil until smoking; sizzle over dried chilies, peppercorns, and garlic laid on top.
