Salt & Pepper Tofu

Cornstarch-crusted tofu cubes fried until cloud-light and tossed with toasted peppercorn salt and chili.

The method

    Press tofu 30 minutes; toss in starch blend.

  2. 02

    Deep-fry at 375°F until deeply golden, ~4 minutes.

  3. 03

    Drain; flash-fry garlic and jalapeño in a clean pan.

  4. 04

    Toss tofu with peppercorn salt and aromatics off heat.

  5. 05

    Pile high and eat immediately.
