Soy Sauce Chicken

Whole chicken poached in a spiced soy master stock until the skin turns deep mahogany and the meat stays silken.

    Build the master stock and simmer aromatics 15 minutes.

    Lower chicken in; bring back to a bare simmer.

    Cook 25 minutes, off heat with lid on, then 25 more minutes.

    Brush with stock; rest 15 minutes.

    Chop bone-in into bite pieces; serve with ginger-scallion oil.
