The method

    Marinate fish 15 minutes.

    Blanch sprouts; lay in a wide bowl.

  3. 03

    Fry doubanjiang with ginger and garlic; add stock; simmer 5 minutes.

    Slip in fish; poach 90 seconds; pour over sprouts.

  5. 05

    Top with chilies and peppercorn; pour smoking-hot oil over to sizzle.
