Sesame Balls

Jian dui — chewy glutinous rice balls, red bean center, deep-fried in a jacket of toasted sesame seeds.

The method

    Dissolve sugar in water; work into flour to a soft dough; rest 15 minutes.

    Divide into 12; press each around a tsp of red bean paste; seal.

  3. 03

    Roll balls in a shallow bowl of water, then in sesame seeds until coated.

  4. 04

    Fry at 300°F, rolling gently, 8 minutes until puffed and golden.

  5. 05

    Drain; serve warm.
