    Pour boiling water into flour; stir, knead, rest 30 minutes.

    Roll into a rectangle; brush with sesame oil, sprinkle with salt and scallions.

    Roll into a log, then coil into a snail; flatten gently.

    Pan-fry in shallow oil 3 minutes per side until deeply golden.

    Cut into wedges; serve with soy-vinegar-chili dip.
