    Pat shrimp dry; toss in cornstarch.

    Toast peppercorn and salt in dry pan; grind together.

    Deep-fry shrimp at 375°F for 90 seconds until shells crisp.

    Drain; flash-fry garlic and jalapeño.

  5. 05

    Toss everything with the peppercorn salt off heat.
