    Render pork belly; add doubanjiang, sizzle.

    Add stock, soy, vinegar; simmer 15 minutes.

    Boil noodles; portion into small bowls (Qishan-style: small servings, many refills).

    Ladle hot broth over; top with pork, egg ribbons, tofu, wood ear, chili oil, scallion.
