Smashed Cucumber (Pai Huang Gua)

The cold table's freshest argument and the smashing's own doctrine: the cucumber's crushed lengths — the cleaver's flat the whole technique — dressed in the garlic, vinegar and chilli oil's bright bath, the pai huang gua ("smashed cucumber") whose irregular, bruised surfaces grip the dressing the knife's clean cut never can. The dish is the summer table's five-minute standing argument; the technique is the smash's physics and the salt's draw, the two disciplines at the cold bowl's brightest seat.
Quantities live in the recipe card.
The cucumber
- the Persian's or the English's seeded argument), halved lengthwise
The dressing
- The smash's own argument: the cucumber's halves laid to the board's flat and the cleaver's flat side brought down at the confident whack — the flesh's crushed, irregular lengths (the seed's cavity's broken architecture) the dressing's own gripping surface, and the knife's clean baton the dressing's slippery refusal's certain end.
- The salt's draw and the squeeze: the smashed lengths tossed at the salt's 20-minute rest (the water's draw — the cucumber's crunch's own concentration) and the released water's firm squeeze at the dressing's moment.

Smashed Cucumber (Pai Huang Gua)
Prep: 15 minutes, plus 20 minutes salting · Cook: No cook · Total: About 35 minutes · Serves 2–3 as a side
Ingredients
The cucumber
- 2 cucumbers (about 600 g — the Persian's or the English's seeded argument), halved lengthwise
- 1 tbsp (15 g) salt, for the 20-minute draw
The dressing
- 3 cloves garlic, minced to the paste's honest argument (the salt's pinch at the blade's mash)
- 1½ tbsp (22 ml) Chinkiang black vinegar, 1 tbsp (15 ml) light soy
- 1 tbsp (15 ml) chilli oil with its sediment; ½ tsp (2 g) Sichuan pepper powder (optional)
- 1 tsp (5 g) sugar, ¼ tsp (1 g) salt
- 1 tsp (5 ml) sesame oil; the coriander's handful and the spring onion's slice, over
Instructions
- The salt's draw and the squeeze's law. The salted, smashed lengths rested 20 minutes at the bowl (the water's pooling at the base — the draw's own proof), and the lengths' firm handful's squeeze at the sink's argument (the drawn water's removal the crunch's own preservation, and the dressing's dilution's prevention). Checkpoint — the squeezed lengths run the firm, wrung-crunch argument (the cucumber's own structure at the salt's concentration) — the unsqueezed cucumber the watery dressing's certain end at the bowl's second hour.
- The dressing's bath and the cold service. The dressing's elements whisked at the bowl's base, and the squeezed lengths tossed through at the brief marriage — the coriander's and spring onion's scatter — the dish served at the immediate moment or the 10-minute chill's brief argument. Checkpoint — the eating test: the cucumber's wrung-crunch at the bruised surface's every irregular pocket carrying the dressing's garlic-fire-sour flood — the Sichuan pepper's tingle at the late arrival — the cold table's freshest whole argument at the one bowl.
Troubleshooting
| Symptom | Cause | Fix |
|---|---|---|
| Bowl's pool watery at the service | The squeeze's stage skipped | The firm squeeze — the draw's own removal |
| Cucumber's crunch absent, the soft argument | The salting's over-run, or the cucumber's age | The 20-minute ceiling; the freshest cucumber's law |
| Dressing's garlic argument raw and harsh | The mince's rush | The salt-pinch's paste — the blade's own mash |
Storage, Make-Ahead & Variations
- The dressed bowl serves the first hour at its best (the crunch's slow surrender at the dressing's patience); the squeezed lengths hold 1 day refrigerated for the on-demand dressing. - The dressing's dials run the northern school's sesame-heavy argument and the Sichuan fire's fuller register (this record); the smashed sibling canons (the potato's, the bean's) the one physics's other seats. The #63 cold noodle's and the #59 bang bang's cold table the season's wider argument.
