Mao's favorite: pork belly caramelized in rock sugar then braised low with dark soy, star anise, and Shaoxing until jewel-lacquered.

The method

    Blanch pork belly 3 minutes; drain and pat dry.

  2. 02

    Caramelize rock sugar in oil until amber; add pork and sear.

  3. 03

    Deglaze with Shaoxing; add soys, spices, ginger, scallion, and water to cover.

  4. 04

    Braise covered 90 minutes; uncover and reduce to a lacquer.

  5. 05

    Rest 10 minutes; the sauce should coat like syrup.
