The method

    Dust crab pieces in cornstarch; shallow-fry until shells turn coral.

  2. 02

    In another wok, fry ginger in oil until fragrant.

  3. 03

    Add scallion whites, then wine, oyster, sugar, stock.

  4. 04

    Return crab; toss to coat.

  5. 05

    Off heat, fold in scallion greens and sesame oil.
