The method

    Crisp the pork in a dry wok with ya cai until dark and fragrant.

    Build the sauce in each bowl: chili oil, sesame paste, vinegar, soy, peppercorn.

    Cook noodles until just tender; drain and pile over the sauce.

    Top with pork, scallions, and a final spoon of chili oil.
