Chopped Chili Fish Head

Duo jiao yu tou — a whole steamed fish head buried under a mound of Hunan pickled chilies. Loud, fatty, unforgettable.

The method

    Rub fish head with salt and wine; rest 15 minutes.

  2. 02

    Fry pickled chilies, black beans, ginger, garlic in oil and lard.

  3. 03

    Mound chili mixture over fish head on a platter.

  4. 04

    Steam over high heat 12 minutes.

  5. 05

    Pour off liquid; scatter scallions; drizzle with hot oil.
