Black Bean Spare Ribs

Dim sum classic — chunks of rib steamed with fermented black bean, garlic, chili, and just enough sugar to lacquer.

    Toss with black beans, garlic, chili, wine, soy, sugar, sesame, cornstarch.

    Marinate 20 minutes; spread in a heatproof bowl.
