The method

    Knead dough until smooth; rest 1 hour wrapped in oiled plastic.

    Divide into ropes; rest another 30 minutes.

    Flatten and stretch each rope, slap on counter, tear lengthwise.

    Boil 90 seconds; drain into bowls.

  5. 05

    Top with chili flakes, scallion, and lamb; pour smoking oil to bloom.
