The method

    Marinate beef with baking soda, soy, and cornstarch for 20 minutes.

    Sear beef in a screaming-hot wok 60 seconds; remove.

    Add noodles in a single layer; do not stir for 30 seconds to develop char.

    Add soy mix, then beef, sprouts, and scallions.

  5. 05

    Toss only twice — chow fun should be smoky, not stewed.
